Our Balsamic Vinegar of Modena P.G.I. Organic combines the cooked must and the wine vinegar obtained from grapes exclusively cultivated with the organic process. It is purely designed for a wide range of customers who prefer organic and vegetarian food. Aged in wood barrels, it has a strong fruity note and a brown colour, characteristic of the best Balsamic Vinegars of Modena. It has an intense bouquet and a sweet and sour taste, which reminds of the extracts of the grape with which it is produced.

We call this Balsamic Vinegar of Modena PGI “Classico” because with its characteristics and its density, it reflects the taste of those who mostly appreciate the wine vinegar, to slowly approach Balsamic Vinegar. The youngest of our collection, this product comes from the union of grape must and wine vinegar both from the territory, to obtain a Balsamic Vinegar which is strong on the palate, with a pleasant slightly acid taste.

It is aged in selected oak barrels, from which it draws the best organoleptic qualities. On the palate it is perceived pleasantly aggressive, with a classic taste and slightly pungent. Its fragrance is slightly acidic, with durable and strong wood notes. It is particularly suitable for those who like strong but fresh flavours. Highly versatile, it is suitable to the creation of numerous recipes.

Very peculiar are its balance and softness due to the mixture of cooked must and wine vinegar, both obtained from grapes of the area. Its aroma is barricaded, well-balanced and harmonious.
