It’s qualities

Here are the two main qualities of Traditional Balsamic Vinegar of Modena P.D.O:
Affinato and Extravecchio. The characteristic of these types of vinegars is the long and particular period of aging, of which the fases are monitored with extreme precision in our headquarters in Modena. The final result is a pure and fine dark brown-colored traditional balsamic vinegar. Its aroma is characteristic, fragrant, complex but well blended, penetrating and persistent, by the strong yet enjoyable and balanced acidity. It has an outstanding taste, sweet and sour and well balanced: smooth, intense and persistent.

This variety of balsamic vinegar has a minimum of 12 years of certified aging. The typical spheric, rectangular-based bottle made with thick glass, is mandatory for all the producers, as stated in the Rules of the Product Specification, and it’s sealed by a numbered mark.

This variety of balsamic vinegar has a minimum of 25 years of certified aging and it is obtained from Trebbiano grapes and left to age in different wooden barrels: Oakwood, Chestnut-wood, Acacia wood, Cherry-wood, Robinia, Ashwood. The typical spheric, rectangular-based bottle made with thick glass, is mandatory for all the producers, as stated in the Rules of the Product Specification, and it’s sealed by a numbered mark.

Each of our products is the result of the skillful preparation of raw materials highly selected from the modenese hills: this is the mission of a real modenese vinegar cellar. The aging process of our Balsamic Vinegar of Modena P.G.I and Traditional D.O.P happens in barrels of different types of wood, that contribute to refining and accentuate the taste of all the types of vinegars produced.
