Zucchini Cupcake with balsamic vinegar


3 zucchini
4 eggs
1 tablespoon of parmesan cheese
1 garlic clove
Extra Virgin Olive Oil
Balsamic Vinegar of Modena P.G.I


Wash and cut the zucchinis in round slices. Cook them in a pan with the garlic clove and some oil. When the zucchinis are done, let them cool down, then blend them in a mixer, add eggs, parmesan, salt and pepper.
Pour the mix in a few stamps and put in the oven at 180​°C f​or 15 minutes. Display
the cupcake on a plate and finish with a touch of Balsamic Vinegar of Modena P.G.I
